I will have to say. That is a proper pork chop! Here in the USA we have bred pigs to have little to no marbling and due to customer demand. Sir this is the best way to enjoy that swine! As long as you buy from a reputable company.

Pork should not be pink at all

The only way to cook pork is pink in the middle or it will be dry and tough. Old school to cook pork well done, no need to worry about salmonella.
