I would really like to make one of these for my sister, but I don't know what I need to use to finish or seal it, or if anything is even needed... I've seen many different things which seem to contradict each other... If I could hear it all from one person that would be great

Don't seal it because a knife will cut into it and you'll have essentially plastic mix with your food and it will expose the wood which will eventually rot. Mineral oil is just fine. Just make sure you have a hand planer and some clamps.
